I thought of the book: Drunk Tank Pink, by Adam Alter. It's not totally about design, but definitely touches on color selection. The pertinent subject heading: Environmental psychology, may prove useful. (Also with COVID-19 brain.)

I'm working with a student who is researching behavioral design -- how design affects people's choices day to day -- and we're having a hard time coming up with resources.
