Dear Andi,
I highly recommend these two books written by RISD faculty.
Mapping the Intelligence of Artistic Work: An Explorative Guide to Making, Thinking, and Writing is filled with writing exercises for artists at all stages of articulating their work. Social Medium: Artists Writing, 2000-2015 is a recently published survey of an array of artists' writings.
