Mark,
For what it's worth, I have done a couple data visualization projects 
and have a couple suggestions.  I am currently in the process of 
developing one that is iPad-friendly, using HTML5.

I would suggest the Processing language for the class, as it can be 
compiled to JavaScript (ProcessingJS).  Processing is a programming 
language for artists, and you can load data in through an API for 
visualization.  There are other JavaScript frameworks one could use, but 
Processing is probably the most straightforward, has the best set of 
tutorials, and would be useful for art students anyway.

I should point out that creating the actual visualization is only a 
fraction of the work.  Most of the iceberg, so to speak, is data 
wrangling and getting it into formats that are useful for what one wants 
to show.  Google Refine, can be useful for this.
