There are a number of schools that offer courses specifically geared towards art librarianship. ARLIS/NA's Professional Development Committee recently updated the "Fine Arts and Visual Resources Librarianship: A Directory of Library Science Degree Programs in North America." In it, you'll find specialized courses that are beneficial for art librarians.

That written, one can also craft their education to reflect an arts librarian program--even if their institution of choice does not offer specific classes. However, there is great value in concurrently obtaining one's master of arts in an arts-related program. Many of the schools that have specialized courses offer dual programs. Which leads me to...
An undergraduate degree in art history is helpful, but, at university-level employment, a master of arts or PhD is typically expected.
