Kathy, I'm not sure if this is what you're looking for, but the term in "Bookbinding and the conservation of books" (Library of Congress, 1982) is: "French fold: A sheet of paper printed on one side only and folded over from left and right to form a "section" with uncut bolts. The inside of the fold is blank." (Online version at http://palimpsest.stanford.edu/don/dt/dt1447.html) I just copy-cataloged a book that has pages like this, "Julie Speidel" (Museum of Northwest Art, 2006).
