Lyn,
The School of the Art Institute of Chicago, apart from housing a fantastic teaching collection of 4,000+ artists' books and multiples, offers bookmaking classes in a variety of (graduate) departments, e.g. Printmaking, and Visual Communications. Several courses every year within the Art History/Visual and Critical Studies Departments survey the artists' book movement within its historical context.
