Take a look at "Idea to Image: Preparatory Studies from the Renaissance to Impressionism," published by the Cleveland Museum of Art in 1980 (the author is Mark M. Johnson). It features side-by-side comparisons of sketches and finished works. For sketchbooks of individual artists, I searched our OPAC with "sketchbook" in the title field, and found several artists, e.g., Reginald Marsh, Paul Cezanne, Picasso.
