Hi, Chris:

I think what you're looking for is "Cathedral: the story of its
construction" by David Macaulay (based on his book of the same name from
1973).  It was produced in 1985 by Unicorn Projects Inc. and distributed by
Dorset Video or through PBS. It's great!!
