Dear Cleo, A book I catalogued years ago came to my mind--"Form and color in Greek painting" by Vincent J. Bruno. While it is rather specifically about Greek painting--there is a mention of the painting of statues on p. 50. And the entire book presents an interesting overall picture of Greek color theory and usage. Several mentions are made of sculpture and the book has a good index. It was published by W.W. Norton in 1990. Hope this helps.
