Kathy, I believe this is called a French Fold. The folded edge of a leaf is on the fore edge and the cut edges are bound together, making the resulting page sturdier. I am assuming the book you have is made of rag paper and bound with a hard cover, but traditional Japanese and Chinese pages are also folded this way. Because the paper in Japanese and Chinese books is usually somewhat translucent and very thin, made of kozo, gampi, or other plant fibers, the double-layered page makes printing or calligraphy more readable.

Arlis-l can always be depended upon to come up with answers, so I hope
the bibliophiles among you can help: is there a term to describe the
pages of a book where the pages are double, i.e., they are folded at the
fore edge? This is not an older book whose pages are uncut, but a
contemporary title with no printing or illus. on the inside of the
folded pages. The intent is obviously to make the paper feel heavier
and the volume thicker. Your assistance is appreciated.
