To get you started on the question of the use of color in ancient
sculpture and architecture, you might want to begin with Andrew Stewart's
"Greek Sculpture: an exploration," published in 2 vols. by Yale University
Press. On pp.40-42 of vol.1 there is a brief discussion of the question
under the heading "Finish."
Another brief source is on p.78, vol.1 of Claude Rolley's "La
Sculpture Grecque," under the heading "Polychromie I: melange de
materiaux.," and also on p.82 of vol.1, under the heading "Polychromie II:
la peinture." Rolley gives additional references to the archaeological
literature.
I'll try to dig deeper on this question and respond again. It's a
knotty problem with conflicting points of view.
