You may have tried these ideas already, nevertheless:
1. Pliny's The Natural World/Natural History (title varies with
translation)
for interesting possibilities on the significance of colour in general,
(white seems to be "good" e.g., therefore Arsenic is good, even
healthy!);
and sculpture is also addressed at length.
Can't recall if he says much about painting sculpture.
2. Contact Classics scholars/profs you know personally or have read.
E-mail them, etc.
3. In-depth books on Greek and Etruscan Art/Architecture.
I'd go with #2. Some scholars must have done detailed analyses of
paint traces on surviving works, too.
You're quite right, though, it is an interesting topic, eh?
